The viewpoints of a European, quality chocolate producer are presented. It is increasingly difficult to source high-quality cocoa. From early 2009 to late 2010 prices rose by about 24%. Better management could increase productivity by 10% immediately. The main producers are Ecuador, Papua New Guinea, Madagascar, and the Caribbean (Domincan Republic, Trinidad & Tobago). Some of the main problems include: limited purity, mixed genotypes, poor fermentation, disease management, and the cadmium issue.
